When I make clarified butter I simply put some butter into a pan and put the pan into the oven at the lowest possible setting.

After about 4 to 5 minutes the butter will have melted and the milk (or the whey) will have sunk to the bottom.

Skim off anything that is on the top and pour the clear clarified golden butter into another container discarding the whey. Clarified butter has always been popular because it can be heated at very high temperatures while stilt retaining its buttery taste.

Once the butter has cooled down put it into wraps of greaseproof paper (rolled up like a sausage pulling in the sides at the end to squeeze into shape) or quite simply put it into plastic containers.

It can be stored in the fridge for 12 weeks or in the freezer for up to 3 months.

You can use clarified butter for frying off meat and fish it gives it a really clean golden colour.
