spiced balsamic apples with black pudding and braised cabbage

1 medium red cabbage halved cored and cut into large chunks; leaves separated

13 small shallots peeled

2 cloves garlic peeled and crushed

1/2 tspn crushed cloves

1/2 tsp cinnamon powder

1/2 tsp ground allspice

good grating nutmeg

2 tbsp light muscovado sugar

2 tbsp apple or cranberry jelly

3 tbsp balsamic vinegar

30g butter softened

salt and black pepper

8 small apples or 3 large apples sliced into thick wedges

4 small black puddings (or sausages if you prefer)

Preheat the oven to 150C/30OF/Gas Mark 2.

In a heavy casserole pan mix together all the ingredients except the apples and black pudding. Add 3 tbsp water and season well.

Cover and cook in the oven for 2 hours stir the cabbage a couple of times during cooking to distribute the spice and buttery juices.

Fold the apples into the cabbage half an hour before the end.

When ready to serve fry the black pudding until cooked and crusted all over.

If the cabbage is not quite ready put the pudding in the casserole on toy of the cabbage to keep warm.

Serve the black pudding sliced on top of the apple and cabbage.

Mustard mash would be a good accompaniment.
