Pizza dough
15g fresh yeast
2 tablespoons warm water
250g plain flour
1 teaspoon salt
2 tablespoons olive oil
3 tablespoons milk
Topping
3 tablespoons olive oil
500g tomatos dinned de seeded and chopped
salt and pepper
To finish
125g mushrooms sliced and sauted
3 cloves garlic finely chopped
3 tablespoons grated Parmesan cheese
Cream the yeast with the water.
Sift the flour and salt into a bowl make a well in the centre and pour in the yeast oil and milk.
Mix to a firm but pliable dough adding a little more milk if necessary.
Turn onto a floured surface and knead vigorously for 5 minutes.
Place in a clean basin cover and leave to rise in a warm place until doubled in bulk.
Divide the risen dough into 6 portions shape into balls and roll into 10cm circles.
Brush with half of the oil cover with the tomatoes and season well.
Top with the mushrooms garlic and cheese.
Sprinkle with the remaining oil and leave to rise in a warm place for about 15 minutes.
Bake in a preheated hot oven 220
