Long grain brown rice measured to the 275ml level in a glass measuring jug

570ml boiling water

1 dessertspoon oil

1/2 onion (finely chopped)

75g golden raisins or sultanas

700g seafood (the fish you use for this can be any mixture you like fresh crab king prawns scallops etc. eg 225 g each of prawns halibut skinned and cut into chunks and scallops sliced)

110g butter

110g mushrooms sliced

75ml dry sherry

25g plain flour

2 teaspoons ftesh toot ginger peeled and grated

2 teaspoons hot curry powder

1/2 teaspoon mustard powder

275ml single cream

110g Cheddar cheese grated

Cayenne pepper

Salt and freshly mliled black pepper

Preheat oven to gas mark 6 4000F (200
