cooked marinade


2 carrots

750ml water

2 onions

1 bouquet gami

1 celery stalk

1 sprig rosemmy

20g butter

2 cloves

1L full bodied red wine

1 pinch peppercorns

100ml red wine vinegar

Finely slice the vegetables put in a large saucepan and sweat in the butter. Add all the other marinade ingredients bring to the boil then simmer for 20 minutes. Leave to cool. When the marinade is cold put in the meat and marinate for 1 to 3 days. However if you are going to serve the meat on the same day put it into the marinade while it is still warrn. Strain the marinade and keep it to use as the base for the sauce to accompany the meat.
