greek salad with tahini dressing
1/2 large cucumber
1/2 pound tomatoes cut into thin wedges
1 small green pepper quartered seeded and sliced
1 small onion thinly sliced
8 small black olives pitted and cut in half
1/4 cup feta cheese
tahini dressing:
7 tablespoons tahini paste
4 tablespoons plain yogurt
2 tablespoons water
1 tablespoons chopped fresh parsley 1 small garlic clove minced
salt and freshly ground black pepper
Cut the cucumber into 1/4 inchslices then cut these across into 1/4 inch batons and place in a salad bowl.
Add the tomatoes green bell pepper onion and olives.
For the dressing spoon the tahini paste into a small bowl.
Slowly beat in the yogurt and thin down with the water as necessary.
Stir in the parsley garlic and salt and pepper to taste.
Pour the dressing over the salad and toss gently.
Cut the feta cheese into cubes and sprinkle over the top.
This salad goes well served with cold roast meats and pitta bread.
Serves 4
