400g puff pastry
4 crisp green dessert apples
a little sugar
a little butter
200ml caramel sauce
Roll out the pastry evenly 3mm thick and leave to rest for about 10 minutes.
Cue the pastry into 125mm discs using a pastry cutter.
Peel quarter and core the apples then slice dlinly.
Arrange the apple slices evenly over the pastry discs overlapping slightly and 3mm away from the edge finishing widh one round apple slice in the centre.
Sprinkle the tarts widh a pinch of sugar and a little butter.
Bake in the oven preheated to 200C/400F/gas mark 6 for 15 to 20 minutes.
Sprinkle the central apple slice with sugar then caramelize preferably using a blowtorch or under a hot grill
Glaze the edge of each tart with caramel sauce once it is on the plate.
We serve this dish with some vanilla sauce sprinkled with pieces of praline and a small tulipe of vanilla ice cream.
