220g split red lentils (/l1asoor dal)
220g aubergine cubed
750ml water
1 teaspoon tamarind pulp diluted in 2 teaspoons water
1 teaspoon kholomba powder
4 teaspoons peanut oil
1 teaspoon black mustard seeds
4 dried red chllies deseeded and crumbled
large pinch of asafoetida
12 curry leaves
salt
Simmer the lentils and the aubergines in the water until soft.
Add the salt tamarind and kholombo powder and bring to the boil.
Take off the heat.
In another pan heat the oil and add the mustard seeds.
When they crackle add the chillies asafoetida and curry leaves.
Fry for a minute and pour over the lentils.
Mix well and serve with rice and a hot pickle.
Serves 4
