4 small mackerel whiting trout or red or grey mullet cleaned
salt and pepper
2 rosemary sprigs or bay leaves
4 tablespoons olive oil
1 1/2 tablespoons lemon juice
1 small clove garlic crushed (optional)
lemon wedges to garnish
Make 3 cuts across each side of the fish.
Sprinkle with salt and pepper.
Place the herbs in a shallow dish and lay the fish on top.
Mix together the oil lemon juice and garlic if using and pour over the fish.
Cover and chill for 3 to 4 hours turning several times.
Transfer the fish to the grill rack.
Place about 10cm under a preheated moderate grill and cook for 5 to 6 minutes on each side until cooked through and golden.
Serve immediately garnished with lemon wedges.
Serves 4
