penne with sun dried tomatoes and mozzarella

400g penne
8 sun dried tomato halves in oil chopped
150g buffalo mozzarella cheese cut into 2cm dice
3 tbspns olive oil
3 cloves garlic peeled and crushed
350g cherry tomatoes
4 large sprigs fresh basil (including stems) torn by hand
salt and freshly ground black pepper
freshly grated parmesan cheese to serve
Boil the pasta in plenty of lightly salted water until just al dense.
Drain and keep warm.
Heat the oil in the same saucepan and add the sundried tomatoes and garlic.
As soon as the garlic becomes aromatic add the whole cherry tomatoes and roll them around with a wooden spatula over gentle heat for just 1 minute to coat them in the oil.
The cherry tomatoes should still be intact.
Add the pasta the basil and a generous sprinkling of pepper.
Toss for 12 minutes to mix with the tomatoes and garlic.
Add the Mozzarella mix it in quickly and allow it just to warm through.
Remove the pan from the heat before the cheese starts to melt and become sticky.
Serve immediately with freshly grated Parmesan.
This easy dish is quite delicious with the Mozzarella cubes mellowing the robustness of the sun dried tomatoes. The sauce has to be prepared very rapidly 57 minutes in total and must be consumed immediately before the Mozzarella becomes leathery. Other pasta shapes such as fusilli farfalle or orecchiette can be used instead of the penne.
