Ingredients / Directions
2 med ripe cantaloupes
cut into halves
seeded
1/2 cup(s) sugar
1/3 cup(s) fresh orange juice
1 tbsp fresh lime juice
1 tbsp fresh lemon juice
1 can coconut milk
8-ounce
1/4 teaspoon vanilla extract
1/8 teaspoon ground ginger
3/4 cup(s) half-and-half
Rum to taste Scoop the pulp from the cantaloupes. Place in large bowl.
Add the sugar
orange juice
lime and lemon juices
coconut milk
vanilla
ginger
half-and-half and rum; mix well.
Pour half of the mixture into a blender container. Process for 2 to 3 minutes or until smooth. Repeat with the remaining mixture.
Pour into a large nonreactive bowl. Chill
covered for several hour(s).
Ladle into teacup(s)s or soup bowls.
