chocolate pudding

200g fine plain chocolate broken into small pieces

200g unsalted butter

4 large eggs separated

200g caster sugar icing sugar for dredging

creme fraiche

thick greek yogurt

icecream or fresh berries to serve

wire shelf on fourth set of runners in roasting ovenwith cold shell on first set of runners

Line a 225mm loosebottomed tin with baking parchment a springform tin is best if you have one.

Melt the chocolate in a large bowl over a pan of hot water on the simmering plate then add the butter and stir until it has melted blending into the chocolate. Allow to cool slightly.

Whisk the egg yolks with half the sugar until thick and pale you should be able to leave a thick and elaborate trail in the mixture when it is ready.

Fold in the chocolate butter using a wire whisk to combine it evenly.

Whisk the egg whites until stiff then gradually whisk in the remaining sugar to give a glossy meringue.

Fold the egg whites into the chocolate mixture then scrape the mixture into the prepared tin.

Bake in the roasting ovenwith the cold shelf for 40 minutes until just set or for about an hour in the four ovenaga baking Ove n with the wire shelf on the third set of runners

Leave to cool slightly. The cake may sink a little but dont worry.

Carefully release the cake from the tin with a thinbladed knife around the mixture before peeling away the baking parchment.

Dredge with icing sugar.

Serve either warn or completely cold with creme fraiche greek yogurt ice cream or fresh berries.

This is like a baked chocolate mousse cake and utterly delicious although as with all chocolate recipes much depends on your choice of chocolate. Use the best you possibly can and preferably one with 70 per cent cocoa solids.
