3 slices white bread crusts removed
3 fl oz milk
8oz smoked cod s roe skin removed :
3 cloves garlic crushed with
a little salt
1/2 onion grated
juice and zest of 11/2 lemons
l/3 pint good olive oil
salt and paprika
Soak the bread in milk for five minutes squeeze dry and place in a food processor with the next four ingredients.
Blend until smooth.
With the machine still running add the oil little by little as for mayonnaise.
If it becomes too thick thin with a little water.
It should be the texture of thick mayonnaise.
Season with salt and paprika to taste.
Garnish with black olives.Hummus
1xl4oz can chickpeas drained
juice of 2 lemons
3 cloves garlic crushed with a little salt
4 tbsp tahini (sesame paste)
1/4 pint olive oil
salt and cavenne nevper
Place the first four ingredients in a food processor and blend until smooth.
With the machine still running add the oil little by little as you would for mayonnaise.
If too thick add a little water.
Season with salt and cayenne pepper.
Serve in a bowl dribble with olive oil and garnish with a pinch of paprika and a sprinkling of chopped parsley.
