risotto alla milanese

italian

4 tablespoons olive oil

1 onion finely chopped

250g short grain rice

750ml chicken stock

25g butter

50g grated Emmenthal cheese

50g grated Parmesan cheese

salt and freshly ground black pepper

Heat the oil in a pan and fry the onion for about 5 minutes until it starts to soften.

Add the rice and fry stirring for about 3 minutes until it begins to look transparent.

Pour in the stock.

Season with salt and pepper cover and cook over a gentle heat for about 20 minutes until the rice is tender and has absorbed all the liquid.

Stir with a fork mix in the butter and grated cheeses and serve in a hot dish.
