prawns with lemon and garlic
12 king prawns in their shells (350g)
110ml olive oil
Juice of 1 large lemon and grated zest of 1/2 a lemon
2 doves of garlic crushed
1 teaspoon salt
Coarsely ground black pepper
50g butter
First of all line a grill pan with foil then arrange the prawns in their shells on the foil.
Next in a jug mix together the oil lemon juice zest crushed garlic and salt and pepper. Whisk everything together with a fork and then pour this mixture over the prawns.
Leave them to marinate for at least an hour.
When you are ready to cook them pre heat the grill to a medium heat and then dot the butter over the prawns.
Place them about 7.5cm from the heat and grill turning them frequently.
Cook them for about 5 or 6 minutes in all or until the skin darkens and begins to look slightly brown.
Serve on warm plates with the hot juices poured over and have some napkins and finger bowls on the table.
Serve with some really nice chilled white wine and lots of crusty bread to mop up the buttery oil and lemon juices.
