175g chopped almonds
50g candied lemon peel finely chopped
50g candied orange peelv finely chopped
25g glace cherries finely chopped
20g crystallised ginger finely chopped
175g sugar
2 teaspoons vanilla sugar
100g flour
grated rind 1 lemon
40g butter
150ml milk
150ml pint cream
salt
100g bitter chocolate
Mix the chopped almonds with the candied lemon and orange peel cherries ginger sugar vanilla sugar flour and grated lemon rind.
Heat the butter with the milk cream andsalt in a large pan.
Stir in the almond mlxture.
Simmer gently stirring for 5 minutes.
Line a baking sheet with greased foil.
Using a teaspoon dipped in cold water place little mounds of the almond mixture wide apart on the foil. (Florentines run into each other while cooking if not widely spaced).
Smooth flat with a wet knife.
Bake at I80
