Choosing a crab
Where possible the Chinese prefer to buy crabs live and cook them when they are needed. In this country most crabs are sold already cooked so take care to buy one which is fresh and does not have a fishy smell. The heavier the crab the better.
Cooking live crabs
Bring a large pot of water to the boil add 2 teaspoons of salt and then put in the crab. Cover the pot and cook the crab for about 57 minutes until it turns bright red. Remove with a slotted spoon and drain in a colander. Leave to cool.
Removing cooked crahmeat
Extracting the crabmeat is not difficult but it takes a little time and patience. Follow these steps:
1 Place the crab upside down with the shell on the worktop. Using your fingers twist the claws from the body. Do the same with the rest of the legs. They should come off quite easily.
2 Now twist the bony tail flap on the underside of the crab and discard it. With your fingers prise the body from the main shell.
3 Remove and discard the small baglike stomach sac and its appendages which are located just behind the crabs mouth.
4 With a teaspoon scoop out the brown crabmeat.
5 Pull the soft feathery gills which look a little like fingers away from the body and discard them.
6 Using a cleaver or heavy knife split the crab body in half and using a knife fork or skewer scrape out all the white crabmeat from the body and from the claws and legs.
Combine the brown and white crabmeat.
Tinned or frozen crabmeat
If you are using frozen crabmeat thaw it thoroughly before you use it. Tinned crabmeat has a fishy odour. If you are forced to use it rinse it carefully first in cold water.
