Cold Tomato Soup
“Gazpacho Andaluzbr>
2 cups water
1 medium onion, finely chopped
3 ripe tomatoes, peeled, seeded and chopped
1 cucumber, peeled and sliced
4 tablespoons white vinegar
2 teaspoons salt
3 cloves garlic, crushed
4 slices bread, cut in pieces
4 tablespoons olive oil
Garnishes:
1 cucumber, diced
1 green pepper, diced
1 medium onion, finely chopped
1 tomato, finely chopped
1 cup croutons
Combine first nine ingredients and let stand for one hour. Puree in a
blender and chill in refrigerator. Garnish and serve chilled in soup =
bowls.
Serves 4.
