1 2/3 cups all-purpose flour
3/4 cup rye flour
1/3 cup packed brown sugar
1 tablespoon baking powder
2 teaspoons caraway seed
1 1/4 teaspoons salt
2 beaten eggs
1 cup milk
1/3 cup cooking oil
In a mixing bowl stir together the all-purpose flour, rye flour, brown sugar, baking powder, caraway seed and salt. Make a well in the center.
In another mixing bowl stir together the beaten eggs, milk and the cooking oil. Add the milk mixture all at once to the flour mixture, stirring just till moistened.
Spoon the muffin batter into greased muffin pans, filling 2/3 full. Bake in a 375 F oven 20 to 25 minutes or till done. makes 15 muffins.
