100g plain flour

2 eggs beaten

1 tbsp oil

pinch salt

300ml water orange juice or beer

vegetable oil for frying

Place all the ingredients together in a blender or processor and whizz until smooth. Alternatively put the flour in a mixing bowl gradually beat in the eggs and oil followed by the liquid.

Leave to stand for 30 minutes.

Heat a large solid frying pan on the boiling plate.

Pour in a little oil and wipe around with a wad of kitchen paper.

Pour in a little batter about 1 to 2 tablespoons depending upon the size of the pan and swirl and tilt around to cover the base with batter.

When the pancake curls around the edges toss over to cook on the other side for about 30 seconds..

Serve on a warm plate.

Every 2 to 3 pancakes reoil the pan.

French style crepes make a change from traditional english pancakes. These should be so thin that you can almost see through them. You will need a good heavy pan for even cooking and the batter must be made at least 30 minutes before cooking. Use water orange juice or beer as the liquid depending upon what you fill your crepes with.
