vegetarian

12 ripe firm tomatoes

sea salt and freshly ground black pepper

a dash of caster sugar

olive oil

garlic

thyme and basil (optional flavourings)

Remove the stalks then cut the tomatoes in half and remove the seeds with a teaspoon.

Lay the tomatoes cut side up on lift off paper on a baking sheet and sprinkle with salt and pepper and a dash of sugar. Drizzle a little olive oil over them.

Place in the simmering oven for approximately 6 hours.

The tomatoes should reduce to half their original size but not turn brown.

Turn them over for the last hour.

The finished tomatoes should he firm. Keep an eye on them.

When the tomatoes are cool place in a jar with the flavourings (if using) and cover with olive oil.

This can be stored in the fridge for 3 months if well sealed.

Expect the oil to become cloudy.

In Italy they usually sun dry plum tomatoes. I suggest you dry whatever variety you grow that are not needed for salads or cooking. I add a little sugar to counteract the lack of taste of italian sunshine.
