chocolate soup

725ml milk

250ml double cream

500g dark chocolate (6570% cocoa solids) chopped

50g caster sugar

8 medium egg yolks

200ml whipping cream lightly whipped

Grand Marnier

clotted cream and chopped roasted hazlenuts to serve

Bring the milk and cream to the boil then add the chocolate and stir until melted (about 3 minutes).

Set aside.

Heat the sugar with 2 tbsp water to make a syrup.

When the sugar has melted bring to the boil and boil for 1 minute.

Start to whisk the egg yolks then gradu?lly pour the syrup over the yolks while whisking continuously.

Once the sugar has been incorporated continue to whisk until the mixture is cold and has doubled in volume; this takes about 5 minutes.

Fold in the whipped cream.

Mix the egg mixture with the chocolate cream mixture then distribute the mixture between the coffee cups.

Sprinkle 1/2 tsp Grand Marnier over each.

Chill well for at least 2 hours.

To serve top each cup with a tiny scoop of clotted cream and a sprinkling of chopped nuts.

You can freeze the leftover egg whites for use in other recipes.
