risi e bisi salad

1 cup arborio rice

2 cups fresh or frozen peas

1/2 cup imported black olives halved and pitted

1 small red onion chopped

1/2 cup chopped fresh parsley

4 ounces diced prosciutto ham or leftover cooked chicken

dressing:

1 cup chopped fresh parsley

1 clove garlic minced

1/2 cup chicken stock

2 tablespoons olive oil

2 tablespoons fresh lemon juice

salt and freshly ground peppper to taste

Cook rice in 2 cups salted simmering water until water is absorbed (about 20 minutes).

Fluff and let cool.

Cook peas in salted boiling water for 3 minutes.

Drain and let cool.

In a large bowl combine rice peas olives onion parsley and ham or chicken.

In a small bowl whisk all dressing ingredients together.

Toss with rice mixture.

Taste and adjust seasoning.
