quick vegetable stock

1 stick of celery cut in half lengthways

2 medlum carrots split in half lengthways

large onion sliced

A few parsley stalks and celery leaves

12 black peppercorns

2 bay aves

A line salt

570ml850 ml cold water

Simply place all the ingredients in a small saucepan cover with a lid and bring everything up to the boil then boil briskly for 10 minutes.

Then strain and discard the vegetables and the stock is ready to use.
