pineapple and lemon dressing
4 tablespoons lemon juice or juice of 1 lemon
2 tablespoons clear honey
2 tablespoons unsweetened pineapple juice
1 garlic clove minced
salt and pepper
Beat the lemon juice with the honey pineapple juice garlic and salt and pepper to taste until well blended.
Alternatively place all the ingredients in a screwtop jar and shake vigorously to combine well before using.
Serve with a fruit salad of bite size cubes of pineapple and mango sprinkled with plenty of raisins.
Makes about 1/2 cup
