cock a leekie soup

15g butter

2 chicken quarters

350g leeks trimmed

1 litre chicken stock

1 bouquet garni

salt and pepper

6 ready to eat prunes halved and stoned

Melt the butter in a large ovenproof saucepan and fry the chicken until golden brown.

Chop off the white part of the leek and dice it. Reserve the green part.

Wash all the leeks well.

Add the white part to the pan and cook for about 5 minutes until soft.

Add the stock bouquet gami and seasoning to taste.

Bring to the boil cover and place in the simmering ovenfor 1 hour or until the chicken is tender.

Shred the green parts of the leek add to the pan with the prunes and continue cooking for a further half hour.

To serve remove the chicken cut the meat into large pieces and discard the skin and bone.

Put the meat into warmed soup bowls and pour over the soup.

Serve hot.

Cock a leekie is a traditional scottish soup that is more of a meal in a dish than a starter. A little beef can also be added for a more robust flavour.

Serves 4 as a meal.
