peanut cookies
4 oz margarine
2 oz caster sugar
6 oz plain flour
pinch salt
a little milk
2 oz peanuts roughly chopped
Cream margarine and sugar until light and fluffy.
Sieve flour and salt stir into the mixture and mix to a stiff dough.
Turn on to a floured surface knead lightly and roll out 1/4″ thick.
Cut into circles with 2″ cutter and place on greased baking sheet.
Brush biscuits with milk and sprinkle with chopped nuts.
Bake in a moderate oven for about 12 minutes or until crisp and golden brown.
Leave on the sheets for a minute then remove and cool on a wire rack.
