3 tablespoons sunflower oil
1 large onion chopped
30Og moath soaked overnight and left to sprout for 8 hours
4 green chillies slit lengthways so the seeds an exposed but the chilli is not broken in 2
1 teaspoon turmeric pawder
1 teaspoon coriander powder
1 teaspoon cumin powder
1/2 teaspoon sugar
2 tablespoons coriander leaves chopped
4 tablespoons coconut grated if fresh or desiccated
salt
Heat the oil in a pan and fry the onions until golden.
Add the sprouted moath chillies powder spices salt and sugar and stir well.
Add a little water and cook on a low heat until soft but not mushy.
Stir over a high heat to dry up any remaining water.
Take off the heat and serve sprinkled with coriander leaves and coconut.
A nutritious vegetarian dish that can be served as a salad.
Serves 4
