lamb with apricots

600g lean boneless lamb trimmed and cubed
300ml yoghurt
4 onions ground to a paste
2 teaspoons ginger paste
2 teaspoons garlic paste
5 tablespoons tomato puree
1 teaspoon chilli powder
1 teaspoon turmeric powder
1 teaspoon garam masala powder
4 teaspoons sugar
2 tablespoons distilled vinegar
6 tablespoons sunflower oil
150g dried apacots soaked for 15 minutes and stoned
salt
Mix the lamb with all the other ingredients except the oil and apricots.
Reserve for 30 minutes.
Remove the lamb from the marinade
Heat the oil in a heavy pan and add the lamb.
Stir until well browned.
Add the marinade cover and cook for 15 minutes on a low heat adding a little water as necessary.
Add the apncots cover and cook until the meat is done.
Serve hot with any crisp roti or vegetable pulao.
This is a specialiq of the Parsee community and one that is served on many special days.
