wild mushroom salad
450g wild mushrooms washed but not peeled 1 clove garlic chopped
2 tbsp olive oil
2 tbsp fresh lemon juice
1/2 caster sugar
salt and freshly ground black pepper
lettuce radishes and sorrel leaves (for the salad base) shredded
2 tsps chopped parsley and chives
Slice the mushrooms and saute them with the garlic in 1 tablespoon of hot oil for 2 minutes. Do not let them burn.
Mix the lemon juice with the sugar until this has dissolved.
Place the garlic mushrooms in a bowl and while still warm toss with the remaining oil and the lemon juice mixture.
Season then cool.
To serve make beds of shredded salad. Sprinkle with chopped herbs and pour on the mushrooms and dressing.
