12 fresh shiitake mushrooms stem ends trimmed
4 baby leeks sliced and soaked in cold water (check for grit)
360g japanese shortgrain rice washed in cold water
10cm dried kelp (kombu) (optional)
4 slices fresh root ginger
700m1 light chicken stock or lightly salted water
1/2 tbsp hijiki or wakame seaweed (or both) soaked in cold water until soft
3 tbsp rice vinegar
1/2 tbsp black or white toasted sesame seeds to serve

tbsp mirin
3 tbsp lemon juice
3 tbsp dark soy sauce
