300g rice noodles broken into short lengths
1 tablespoon srunflower oil
1 teaspoon black mustard seeds
10 curry leaves
2 teaspoons split black lentils (urad dal) washed and soaked for 5 minutes
4 green chillies slit lengthways so seeds are exposed but the chilli is not broken in 2
salt

Put the noodles in a pan of water and bring to the boil.
Take off the heat and drain.
Heat the oil and fry the mustard seeds.
When they pop add the curry leaves.
Add the lentils and fry until golden then add the chillies.
Stir in the noodles season with salt and sugar and spunkle some water on top.
Cook until the noodles are soff.
From south India and can be served for breakfast or tea. It also makes a good snack while travelling and it always reminds me of long train journeys.
