raspberry coulis
ladenis
150ml water
300g caster sugar
50 r spberries frozen or fresh
75ml liqueur either kirsch framboise or eau de vie de framboise
Make a sugar syrup by combining the water and sugar in a saucepan bringing it to the boil and simmering it for 15 minutes.
Remove from dhe heat.
While the syrup is still hot add the raspberries
When cold put through a blender.
Strain through a very fine stainless steel strainer making sure that you extract all dhe juice and leave all the pips.
At this stage you can add the liqueur of your choice and
Stir well.
Pour into a clean bowl cover and store in the refrigentor.
The inclusion of a liqueur contributes to the intensity of the flavour but is not strictly necessary.
