140g caerphilly or lancashire cheese grated
110g fresh white breadcrumbs
2 tablespoons finely chopped spring onion or leek
3 egg yolks
1 heaped tablespoon chopped parsley
1/2 teaspoon dried thyme
1 teaspoon mustard powder
salt and pepper to taste
1 egg white lightly beaten
Dried breadcrumbs for coating
Lard or sunflower oil for shallow frying
Mix the cheese with the breadcrumbs and spring onion or leek.
Blend the yolks with the herbs mustard and seasonings then add to the breadcrumb mixture to bind it.
Divide the mixture into 12 then roll each piece into a small sausage shape about 5 cm (2 in) long.
Dip in egg white then roll in the dried breadcrumbs and shallow fry turning constantly in the fat until golden brown on all sides.
Drain on kitchen paper and serve immediately.
Makes 12
