cranberry vinaigrette
4 tablespoons hazelnut oil
juice of 1 orange
1 tablespoon raspberry vinegar or red wine vinegar
1 tablespoon cranberry sauce or jelly 1/2 cup coarsely chopped hazelnuts
salt and pepper
Put all the ingredients in a bowl with salt and pepper to taste and beat well to combine.
Alternatively place all the ingredients in a screwtop jar and shake vigorously to combine well before using.
Beat the dressing again before serving.
This is a perfect dressing to use on leftover turkey. Slice the turkey into bitesize pieces and serve with quartered leaves of belgian endive (chicory) garnished with orange slices.
Makes about 1 cup
