peperonata

6 small peppers assorted colours

4 tbsp olive oil

2 onions skinned and finely sliced

1 clove garlic skinned and crushed

450g plum tomatoes skinned quartered and seeded

2 tbsp balsamic vinegar

10 black olives pitted and halved

salt and pepper

Wash quarter and de seed the peppers.

Heat the oil in a large castiron pan on the floor of the roasting oven.

Stir in the onions and cook for about 5 minutes until soft.

Add the garlic and peppers stir occasionally and cook for 101 S minutes until the peppers are softening.

Stir in the tomatoes and cook again for 5 to 10 more minutes.

Stir in the vinegar salt and pepper and olives.

Serve hot or cold.

This is the most tasty way I know of cooking peppers and it looks most attractive. Cut the peppers and tomatoes to similar shapes and sizes to make the finished dish look its best.

Serves 8 as a starter with crusty bread or 4 as an accompaniment to a main meal.
