lemon and walnut tart

1 sweet pastry case 230mm round or oblong

100g butter

100g soft brown sugar

2 level tbsp self raising flour

75g chopped walnuts

2 eggs separated

rind and juice of 1 lemon

Cream butter and sugar until light and fluffy. Beat in the flour walnuts egg yolks lemon rind and juice.

Whisk egg whites until stiff and fold them in. Pour into flan case and bake on the floor of the roasting ovenfor 45 minutes until golden and risen.

Serve with cream or citrus sauce.

The lemon in this recipe complements the richness of the walnuts. Serve with cream or a citrus sauce.
