1.35 kg old potatoes peeled
680g onions thinly
455g carrots cut into
thick matchsticks
Salt and pepper
About 1.35 kg middle neck of lamb chops
Stock or water (see recipe)
Chopped parsley for sprinkling
Set the oven at Gas Mark 2 300 degrees F 150 degrees C.
Slice half of the potatoes fairly thinly and put into a large casserole with the onions and carrots. Season well with salt and pepper.
Trim the lamb chops and arrange on top.
Cut the remaining potatoes in half and place around the meat.
Season lightly.
Halfcover the ingredients with stock or water. Cover and cook slowly in
the oven for about 3 hours or until the meat is really tender.
Slip any loose bones from the meat and sprinkle with parsley before serving.
Serves 5
