150g plain flour
1/2 level tsp salt
1 level tsp ground cinnamon
1 level tsp ground mixed spice
450g sultanas cleaned
350g currants cleaned
350g raisins cleaned
225g glace cherries
50g walnuts chopped
10 oz1300g butter softened
300g soft brown sugar
5 eggs
2 tbsp black treacle finely
grated rind of 1 lemon
4 tbsp brandy
Grease and line the tin with greaseproof paper.
Sieve the flour salt cinnamon and mixed spice together.
Stand the treacle and a tablespoon in a basin on the aga to warm.
Weigh and pick over the dried fruits.
Cut the cherries in half wash in warm
water and dry.
Add to the other fruit.
Chop the walnuts and add to fruit.
Crack the eggs into a basin and beat well together.
Place the butter and sugar in a bowl and beat well until light and fluffy.
Beat in the eggs adding a little flour with each addition to prevent curdling.
When all the eggs are beaten in stir in the prepared dried fruits.
Fold in the flour the lemon rind and finally the treacle and brandy. Spoon into the prepared tin and level the top.
Place the ovenshelf on the floor of the simmering ovenput the cake in and bake for 8 to 12 hours.
To test when the cake is done insert a warm skewer into the middle of the cake.
If it is cooked it will come out clean.
Cool in the tin.
When cold wrap the cake in foil and store in a cool place.
Rich fruit cakes baked in the aga are wonderfully moist and evenly cooked. Cakes cooked in the simmering ovencan be left overnight and there is no need to line the cake tin. Two cakes can be baked at a time one for you and one to give away. Cooking times vary depending on the size of the tin the quantity of the mixture and the ovenheat. However I find that any cake put in at bedtime and removed first thing in the morning will be evenly cooked and not overdone. If your simmering ovenis low on heat give the cake up to 24 hours. This recipe makes enough mixture for a 230mm round tin or an 200mm square tin. You can halve the recipe easily for a 80mm round or a 150mmsquare tin or double the recipe for a 300mm round or 280mm square tin. This is useful for a tiered wedding cake.
