3 tablespoons sunflower oil
1 teaspoon black mustard seeds
1 teaspoon cumin seeds
large pinch asafoetida
1 large onion chopped finely
150g potato peeled and cut into small cubes
300g french beans chopped finely
1 teaspoon turmeric powder
1 teaspoon chilli powder
1 teaspoon goda masala powder
1 teaspoon coriander powder
salt
Heat the oil in a kadai or wok.
Add the mustard seeds.
When they crackle add the cumin and asafoetida.
Stir once.
Add the onion and stir until translucent.
Add the potatoes and fry for a minute.
Drop in the French beans all the powder spices and salt.
Add a teaspoon or so of water cover and cook the vegetables in their own steam until the potatoes and French beans are cooked.
Serve hot with rotis.
