laverbread quiche

For the pastry

100g plain flour

100g wholemeal flour

100g butter or hard margarine

For the filling

2 tablespoons soya oil

230 9 (8 oz) leeks shredded

1 small carrot finely diced

1 stick celery diced

1 small onion finely chopped

110g streaky bacon

chopped (optional)

3 egg yolks size 3

110g lowfat cream cheese

280 ml milk or single cream

Half a 213g can laverbread

Pepper to taste

A 25.5 cm loosebased flan tin

Set the oven at Gas Mark 5 375 degrees F 190 degrees C.

Put a baking tray in the oven to heat.

To make the pastry mix the flours then rub in the fat until the mixture resembles breadcrumbs. Bind with three to four tablespoons iced water to make a soft but not sticky dough then roll out the pastry and use to line the flan tin.

Heat the oil in a large frying pan.

Add the prepared vegetables and cook gently until tender.

Remove from the pan and set aside.

Cook the bacon (if using) in the pan until lightly browned and crispy.

Mix the vegetables and bacon with the remaining ingredients.

Taste and adjust the seasoning.

Pour the filling into the pastry case then stand the quiche on the baking tray and bake for 40 to 45 minutes until the filling has set.

Serve warm.

Makes one 25.5 cm quiche
