Festive Holiday Cheer

1 can (12 oz) frozen apple juice concetrate, thawed

1 can (12 oz) ” cranberry-apple juice concentrate, thawed

6 cans (12 oz) water

1 can (6 oz) frozen lemonade concentrate, thawed

5 sticks of cinnamon

1 tsp ground nutmeg

7 whole cloves

1/3 c of rum or cinnamon schnapps

12 cinnamon sticks for garnish

In a 4 qt dutch oven or kettle, combine apple, cranberry-apple juice

concentrates and water. Stir in the lemonade concentrate and the next 3

ingredients. Bring to a boil, reduce heat, cover and simmer for 15 mins.

Discard the cloves and the cinnamon sticks. Stir in the rum or the cinnamon

schnapps. Pour into mugs. Serve warm and garnish w/ the sticks.

Cheese Stuffed Mushrooms

1 1/2 lbs of small, fresh mushrooms–cleaned and stemmed

1 pkg (8 oz) cream cheese, softened

dash of salt

dash of worcestershire sauce

dash of ground nutmeg

pepper to taste

1 c of fresh grated parmesan cheese–divide into 2 parts

Preheat oven to 350 degrees. Place mushroom caps on greased baking pan.

Combine remaining ingredients, reserving 2 tbsp of P. Cheese. Sppon

ingredients into caps and sprinkle w/ P. Cheese. Bake for 20 mins, serving

warm.

Spinach Balls

2 pkgs (10 oz each) of frozen, chopped spinach

6 large eggs, slightly beatened

1 stick of butter, softened

2 c of herbed stuffing

1 tsp garlic salt

1/2 c fresh grated parmesan cheese

1 small onion, grated

1 to 2 tbsp olive oil

8 oz crumbled feta cheese

Preheat oven to 350 degrees. Thaw spinach and drain–press to remove all

water. Combine spinach and remaining ingredients into a large mixing bowl.

Roll mixture by tablespoonfuls into 1 inch balls. Place them on a lightly

greased baking pan and bake for about 20 mins. All excess balls maybe

freezed. If using frozen balls–immediately transfer them to the oven. DO

NOT THAW.
