soft polenta

225g coarse yellow polenta

50g butter plus a little more at the table

grated Parmesan

Bring 1.5 litres of water to the boll in a deep saucepan.

Add a heaped teaspoon of salt.

Put the polenta in a jug or bowl something that you can pour from in a steady stream to avoid lumps.

Pour the polenta into the boiling water whisking continuously with the other hand.

Now watch it.

As you stir there will be eruptions in the mix small at first but enthusiastic enough to burn.

Turn the heat down and continue stirring.

Let the polenta continue to cook over a very low heat whisking and stirring from time to time partly to lighten it partly to stop it sticking to the pan.

After about half an hour of very gentle bubbling the mixture should start to come away from the side of the pan as you stir it.

It may take longer but at any rate it should be done in about 40 minutes.

Add the butter in thin slices or little cubes stirring with the whisk (or a spatula if the mixture is getting stuck in the comers) until It has melted and the polenta is shining.

Spoon into a warmed serving dish adding more butter to the top and scattering over Parmesan.

Use as much as you like without making it too salty

Serves 4 as a side dish
