smoked mackerel and orange kebabs
175g packet par cooked long grain rice salt
15g butter
juice and rind of 1/2 orange
4 medium fillets of smoked mackerel skinned
1 teaspoon lemon juice
freshly ground black pepper
3 large oranges peeled and segmented
2 tablespoons blanched almonds
1 bunch watercress trimmed to garnish
Cook the rice in boiling salted water for 10 minutes or until it is just tender.
Drain the rice and stir in the butter orange juice and orange rind.
Keep the rice warm.
While the rice is cooking cut the mackerel fillets across into 2.5cm strips and toss them in the lemon juice.
Sprinkle with pepper.
Thread the mackerel strips and orange segments alternately on to 4 skewers.
Grill under a preheated hot grill for 5 minutes turning the skewers once.
Scatter the almonds on a clean baking sheet and toast them for 2 minutes turning them once.
Just before serving stir the toasted almonds into the rice.
Serve the skewers on the rice and garnish the dish with the watercress sprigs.
Serves 4
