4 rump steaks (150g each)
2 onions finely chopped
1 clove garlic finely chopped
1 anchovy fillet soaked drained and finely chopped
1 tablespoon finely chopped parsley
1/2 teaspoon each dried rosemary thyme
juice 1/2 lemon
40g butter
salt pepper paprika
300ml pint water
25g flour
150ml red wine
1 tablespoon single cream
Make incisions in the fat round the steaks so that the meat does not curl up while cooking.
Mix the onions garlic anchovy parsley rosemary thyme and lemon juice.
Rub this mixture into the steaks.
Cover and leave to absorb the flavours for 3 hours.
Melt the butter in a pan and fry the steaks for 10 minutes over a low heat turning once.
Season with salt and pepper.
Keep hot on a dish.
To make the sauce add the water to the minutes over a low heat.
Season with salt pepper and paprika.
Stir in the cream.
Serve the meat with the sauce handed separately.
