turkey breast with ham and cheese
Filetti di Tacchino alla Valdostano

500g boned turkey breast
flour for coating
salt and pepper
1 egg beaten
2 tablespoons oil
25g butter
4 slices cooked ham
125g Bel Paese or Mozzarella cheese thinly sliced
parsley sprigs to garnish
Cut the turkey into 4 slices 5 mm thick.
Season the flour with salt and pepper and use to coat the turkey then dip into the egg to coat.
Heat the oil and butter in a large frying pan add the turkey and fry for about 4 minutes on each side.
Drain and transfer to a grill pan rack.
Cover each portion with a slice of ham and then with cheese.
Place under a preheated hot grill for 1 minute until the cheese is golden and bubbling.
Serve immediately garnished with parsley.
Serves 4
Note: Boned chicken breasts could
be used instead of turkey.
