pork chops with mustard sauce
700g onions
700g trimmed leeks
6 spare rib pork chops
25g butter
1 garlic clove
900ml milk
1 bay leaf
a sprig of thyme
120ml double cream or creme fraiche
3 level tbsp made english mustard
salt and freshly ground black pepper
Halve the leeks lengthwise then chop across in half.
Chop the onions.
Trim the fat on the pods chops.
Heat butter in a flameproof casserole on the boiling plate.
When foaming fry the chops briskly until very light golden brown.
Lay leeks on top add crushed garlic herbs and seasoning.
Pour in milk and bring to the boil.
Bake on the grid shelf on the floor of the roasting ovenfor 25 to 30 minutes.
When pork and leeks are tender remove to an ovenproof dish sitting the pork on the leeks and keep warm in the simmering oven.
Add cream and mustard to the juices in the pan season well and simmer on the simmering plate for 1 to 2 minutes until the sauce is syrupy then pour over the chops.
A very easy supper dish. Use spare rib chops as loin chops wont be tender enough for this recipe.
