To make sloe gin:
Prick 500g sloes all over and place in a jar with 500mi gin and 65g sugar.
Once sealed the jar should be shaken occasionally to dissolve the sugar. The drink should be ready after 2 1/2 to 3 months.
Strain into a clean bottle.
Sloe gin is also available in good offlicences.
For the plums:
800g frim yet ripe plums
100g soft brown sugar
1 tsp vanilla extract
200ml sloe gin
thick cream to serve
Halve and stone the plums place them in a shallow ovenproof dish big enough to hold the plum in one layer.
Sprinkle with the sugar.
Stir the vanilla extract into the gin and pour over the plums.
Cover tightly and place in a preheated oven (180C/350F/Gas Mark 4) for about 45 minutes basting once.
Serve the plums at room temperature with their juices and thick cream.
Serves 4
