pears and almonds in grappa
8 conference or Comice pears
juice of two lemons
2lb caster sugar
6 cloves
2 cinnamon sticks
4oz flaked and toasted almonds
2 bay leaves
20 black peppercorns
grappa to cover
2 medium Kilner jars sterilised
Peel the pears and cover them in water and the lemon juice.
Bring to the boil and simmer for 15 minutes.
Allow to cool.
Divide the pears between the Kilner jars.
Share the remaining ingredients?except the grappa?between the jars.
Cover the pears with grappa leaving a 1in gap at the top.
Invert the jars each day for two weeks to dissolve the sugar.
Store in a dark place for two months.
Serve the pears with a slice of moist Christmas cake mince pie or a wedge of meltingly ripe brie
