orange flavoured custard

4 egg yolks
60g sugar
grated zest of 1 orange
1 vanilla pod split
400ml milk
2 tbspns grand marnier (optional)
Whisk the egg yolk with the sugar until lightly creamed.
Add the orange zest and the vanilla pod to the milk and bring to the boil.
Remove from the heat and leave to infuse for 30 minutes.
Pour half the milk on to the egg mixture heat and then add the remainder.
Cook slowly stirring continuously with a wooden spoon until the custard coats the back of the spoon.
Strain through a wet muslin.
For added flavour you can add the Grand Marnier at this stage.
Leave to cool then store in the refrigerator.
